All their olive trees produce picual olives.
THE OLIVES: PICUAL
A good olive oil starts with good olives. Padilla owns its own olive trees of Picual variety in Bailen (Jaen), next to Sierra Morena. These olives are harvested early, in October, allowing to maintain the naturally high poliphenol level of this variety resulting in maximum antioxidant power. Studies has shown that Picual variety demonstrates an unusually high antioxidant activity.
THE MANUFACTURING: REAL OLIVE JUICE
In the manufacturing process the olive oil is obtained from cold-extraction at a temperature no higher than 77 degrees Fahrenheit for one hour. The production is very limited compared with other methods commonly used in the industry, but the quality is maximum. Also, the appearance of these olive oils is an attractive green color.
